Lentil Curry


Main ingredients: Lentils, onion, red pepper, mushrooms, small tin of peas, cream, youghourt, curry powder, ginger, garlic, salt, rice

Equipment: Wok or large frying pan, hand blender, saucepan for rice
Matt says: "For a creamy texture use a hand blender to blend half the mixture towards the end of cooking."

Ingredients

Ginger
Garlic
1 large onion
3 carrotts
1 cup red lentils
Fresh cream or youghourt
1 tablespoon curry powder
sugar
salt

Recipe

Chop finely onion, garlic, ginger and carrots.
Fry in olive oil with the curry powder for 5 mins.
Add 1 cup red lentils. Add one and a half tablespoons sugar and half a teaspoon of salt. Fry for a further 5 mins.
Add half a litre of water (about a pint glass), 3 tablespoons fresh cream (or youghourt) and small can of peas. Simmer for 10-15 mins, adding more water if necessary.
Serve with rice.
