Rich tomato sauce


Main ingredients: Fresh tomatoes, tomato paste, garlic, onions, sugar, mixed herbs

Equipment: Large pot, hand blender, freezer bags
Matt says: "A basic rich-flavoured tomato sauce, perfect for pizza, pasta, chili etc. Freezes well. The longer you simmer the thicker it gets."

Ingredients for 15 portions:

  • 2-3 kg Fresh chopped tomatoes
  • Tin of tomato puree
  • 2 Cloves garlic
  • 2 large onions
  • Olive oil
  • 3 heaped tablespoons brown sugar
  • 1 tablespoon salt
  • 1 tablespoon mixed herbs

Chop onions finely and fry gently in a large pot for 10 mins

Fill the pot three quarters of the way with fresh chopped tomatoes

Bring to the boil

Add tomato paste, sugar, mixed herbs

Simmer for hour

Blend thoroughly with a hand blender

Simmer on low heat for a further 1-2 hours without lid

Let cool and put into freezer bags
