Stir-fry Tofu with Cashews and Red Pepper


Main ingredients: Tofu, onions, ginger, garlic, carott, cashews, red peppers, cornflour, soy sauce, sugar, vinegar, ketchup

Equipment: Wok or large frying pan, saucepan for rice
Matt says: "Add a handful of lightly fried cashew nuts or unsalted peanuts for an amazing texture and flavour"

Ingredients:

  • Handful of cashew nuts
  • Garlic, 1 clove
  • Tofu, 1 pack, cubed
  • Onions, cut into chunks
  • Carrot, sliced
  • Ginger
  • Red peppers, cut into chunks
  • Cornflour
  • Soy sauce
  • Sugar
  • Vinegar
  • Ketchup

Recipe:

Fry the cashew nuts for 2-3 minutes and put to one side

Stir-fry the onions, ginger, garlic, red peppers, carrot for 3-5 minutes

Add the cubed tofu

Prepare the sauce: In a jug add 2 tablespoons cornflour, teaspoon of salt, 3 tablespoons of vinegar, 1 tablespoon ketchup, 1 tablespoon sugar, 1 tablespoon soy sauce and 2-3 cups of water. Stir thoroughly.

Add mixture to the vegetables in the wok, add the cooked cashew nuts, bring to the boil and cook for 10-15 minutes. The sauce will thicken.

Serve with rice
