Cauliflower Cheese


Main ingredients: Cauliflour, cheese, milk, mustard, flour, black pepper, salt, onion, tomato

Equipment: Large pot, oven-proof dish, strainer
Matt says: "A great winter dish. Serve with baked potato."

Ingredients:

  • Cauliflower
  • Cheese, grated
  • 3 cups Milk
  • Teaspoon of Mustard
  • Heaped tablespoon of Flour
  • Black pepper
  • Salt
  • 1 Onion
  • 1 fresh Tomato

Recipe:

Break or cut cauliflower into smallish pieces and put in pan of boiling water.

Boil for 15 mins

After 10 mins preheat the oven to medium.

Meanwhile make the cheese sauce:

Heat a large knob of melted butter in a saucepan

Add finely chopped onion and cook on a low light for about 5 minutes

Add 1 heaped tablespoon of flour and stir briskly.

Slowly add some milk and bring to the boil stirring all the time.

Add more milk stirring all the time. Add mustard, salt to taste, then add most of the grated cheese.

Cook on a low light for a further 3-5 minutes

Strain cauliflower and put in oven dish. Pour sauce over it.

Top with sliced tomato, grated cheese and black pepper

Cook in preheated oven for 10-15 mins till top bubbles.
