Gougères au Fromage


Main ingredients: flour, cheese, eggs, butter, salt

Equipment: Saucepan, non-stick baking tray, teaspoons to make balls
Matt says: "Great easy-to-make snacks made with flour, cheese and eggs. Once they're cooked let them cool down a bit to dry out, Use a teaspoon in each hand to make the pastry into small balls. Takes a bit of practice but don't worry too much about the shape when you spoon them into the baking tray, they usually come out fine once they're cooked."

These are fantastic for an aperitif snack and very easy to make once you get the hang of it. The hardest part is stirring in the eggs.

Ingredients:

  • 1 pinch salt
  • Cheese 75 g
  • Butter 75 g
  • Flour 150 g
  • Water 25 cl
  • 4 eggs

Melt butter, salt and water together in a pan
Add flour, stir briskly, cook a bit to dry out
Cool a bit. Preheat oven.
Add four eggs and stir briskly. (tip: add 1 egg at first, stir briskly, then add the other 3 eggs and stir again briskly). The mixture will suddenly turn to a paste.
Add cheese
Stir

Make small balls on a baking sheet
Bake for 20 mins

Gougères ready for baking
