Pizza
Matt says: Easier than you think, specially when you get the hang of it.
The pizza dough is surprisingly easy and the whole recipe takes 45 mins, quicker than a delivery. You can make the dough ahead of time and leave it to rise more but you don’t have to.
Dough for 2 pizzas:
2 packets of dry yeast or a heaped teaspoon of fresh yeast
5 cups of bread or ‘0/0’ flour
2 cup of warm water
2 teaspoon salt
2 tablespoon sugar
4 tablespoons of olive oil
Preheat the oven to hot
Put yeast, sugar and warm water in a large bowl and leave for 10 mins
Add the flour, oil and salt and mix together
Knead 100 presses
Leave for 60 mins somewhere warm
Punch down and split the dough in half
Lightly coat a baking tray with olive oil
Put the dough on the tray and push out towards the edges to cover the tray
For the sauce (enough for 2 pizzas):
1 can chopped tomatoes
Finely chopped onion
Finely clove of garlic
Olive oil
Fry the onion in the olive oil on low heat
Add tomatoes
Cook for 10 mins
Spread the sauce on the dough
Add thinly sliced mushrooms, tuna, anchovies, olives, goats cheese, capers, oregano etc
Sprinkle on grated cheese and hand-split morzarella
Put in the oven for 15-20 mins
Cool a bit then serve
