Cette derni\u00e8re mutation place d\u00e9sormais le tourisme au c\u0153ur des revenus et de l\u2019activit\u00e9 locale, tout comme l\u2019\u00e9levage laitier dominait autrefois l\u2019\u00e9conomie du village.<\/p>\n<p class=\"mb-3 leading-relaxed\">L\u2019histoire \u00e9conomique de Baume-les-Messieurs peut se lire \u00e0 travers trois \u00e9poques bien distinctes, chacune fa\u00e7onnant l\u2019usage des terres et le rythme de la vie villageoise :<\/p>\n<h3 class=\"mb-3 text-xl font-semibold leading-snug\">1.\u00a0<span class=\"font-semibold\">L\u2019\u00c2ge de la Vigne (avant les ann\u00e9es 1880)<\/span><\/h3>\n<p class=\"mb-3 leading-relaxed\">Pendant des si\u00e8cles, Baume \u00e9tait une communaut\u00e9 tourn\u00e9e vers la viticulture. Les pentes abruptes de la recul\u00e9e (val\u00e9e aveugle) \u00e9taient terrass\u00e9es en vignes, produisant des vins jurassiens de haute qualit\u00e9. Les maisons \u00e9taient construites avec de grandes caves souterraines fra\u00eeches, destin\u00e9es \u00e0 la fermentation et \u00e0 l\u2019\u00e9levage du vin. De vastes \u00e9tables et granges furent construites ou adapt\u00e9es pour accueillir les vaches Montb\u00e9liardes. Le b\u00e2timent de la fruiti\u00e8re coop\u00e9rative devint le c\u0153ur social et \u00e9conomique du village.
