Baked Beans
Subject: FoodMatt says: Just like the real thing, only better. Perfect with a baked potato with grated cheese on top. Great on toast, especially with home-baked bread (see recipe)
Makes 20 servings. Just like the real thing only tastier!
- 1 kg (2 x 500g packs) cans haricot or white beans
Sauce:
- 7 cups water
- 1 heaped tablespoon vegetable stock powder
- 6-10 tablespoons tomato ketchup
- Small tin of tomato puree (tomato paste concentrate)
- Can of chopped tomatoes or equivalent of home-made tomato sauce
- 4 heaped tablespons of brown sugar
- 5 cloves of finely chopped garlic
- Black pepper
- 1 tablespoon of salt
Thickener (Mix cornflour and water in a jug, add at the end and simmer for 5 mins):
- 2 heaped tablespons cornflour
- 1 cup water
Beans:
Soak 1kg beans in a big bowl of water overnight, then drain.
Place beans in a large pot of water.. Bring to boil then simmer gently for 1 – 1.5 hrs. Drain.
To cook:
- Put sauce ingredients in a large pot and simmer for 10 minutes.
- Add the cooked beans and simmer gently for 20 mins.
- Mix cornflour with water, stir and add to pot.
- Stir gently and simmer for 5 minutes until sauce thickens.
Serve on toast or with baked potato. Good for 3-6 months in freezer.
